They're rich, chewy, and made with only a handful of simple ingredients—perfect for snacking, lunchboxes, or a healthier dessert option. With natural sweetness and plenty of fiber from oats, this recipe is both family-friendly and guilt-free.

Ingredients:

  • 2 cups rolled oats

  • 1 cup peanut butter (creamy or crunchy)

  • ½ cup honey or pure maple syrup

  • ½ cup dark chocolate chips (plus extra for topping, optional)

  • Pinch of salt

  • ½ tsp vanilla extract (optional)

Instructions:

  1. In a small saucepan over low heat, combine the peanut butter and honey. Stir continuously until smooth and well blended.

  2. Remove from heat and stir in vanilla, salt, and oats until fully coated.

  3. Line an 8×8-inch square baking pan with parchment paper. Press the oat mixture firmly into the pan using a spatula or clean hands.

  4. Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each. Once melted, drizzle or spread evenly over the top of the bars.

  5. Refrigerate for at least 2 hours, or until firm.

  6. Once set, lift the parchment out and slice into bars or squares. Store in the refrigerator for up to a week.

These bars are ideal for meal prepping and easy to customize. Add chopped nuts, dried fruit, shredded coconut, or chia seeds to make them even more nutritious. They're also gluten-free if you use certified gluten-free oats.
